How many mini cheesecakes does this recipe make? This recipe makes 6. It can be easily doubled if you need a bigger batch (like I showed in the images!)
Can these no bake cheesecakes be made ahead? YES! These are a great treat/dessert to make ahead. Keep refrigerated and covered for up to 2 days. Add garnishes just before serving.
Do you have to use key lime juice in this recipe or can regular limes be used? Regular limes can be used. Key limes are really juicy and have a slightly floral flavor. They are delicious and I love using the tiny key lime slices in this recipe, but you can also slice mini slices in a regular lime if needed!
How can I make my cheesecake filling less tart if I want to mellow it out a little? The vanilla in this recipe really helps to mellow out the tartness of the lime flavor, but if you want to make the filling with a little less zing, you can start with 1/8th of a cup of lime juice and add more (up to 1/4th cup) until you get to your desired tartness.
Can this recipe be doubled to make a bigger batch? YES!
- Making sure to allow your cream cheese to come to room temperature can make ALL the difference in the creamy texture of the cheesecakes. If you are making this recipe in the morning, I would suggest leaving the cream cheese out overnight the night before so it can fully come to room temp.

- Key lime juice
- Fresh lime zest
- Vanilla extract
- Heavy cream
- Powdered sugar

Easy No-Bake Mini Lime Cheesecakes
Ingredients
- 8 Oz Cream Cheese Full fat, I like Philadelphia brand
- 1/4 Cup Key lime juice Regular fresh lime juice can be used
- 1 Teaspoon Lime zest
- 3/4 Cup Powdered sugar
- 1 Teaspoon Vanilla extract
- Key Limes for garnish slices
Whipped Cream Mix
- 1 Cup Heavy Cream
- 1/4 Cup Powdered sugar
Instructions
- Bring cream cheese to room temperature.
- Whisk together cream cheese, lime juice, zest, powdered sugar and vanilla extract.
- In a separate bowl, mix heavy cream and 1/4 cup powdered sugar. Reserve 1/3rd of the sweetened whipped cream for topping.
- Fold cream cheese mix and whipped cream mix together until smooth. The texture should look like a mousse.
- Use a cupcake scoop to scoop a single scoop of filling into 6 mini graham crusts.
- Pipe reserved 1/3rd whipped cream mix on top of the cheesecakes.
- Slice some key limes and add 1 thin slice for garnish. Sprinkle with a little zest on top if deserved.
