Ermine Frosting (Whipped creamy frosting)

The unique ingredients in this frosting will surprise you, but you will love this light-as-air buttercream! It's sure to win over nonlovers of frosting everywhere!

Ingredients

  • 3 tablespoons all purpose flour
  • 1/2 cup milk
  • 1/2 cup salted butter
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract (lemon, almond or orange is also delish!)

Instructions

  • Whisk together flour and the milk in a small saucepan and cook, whisking constantly, over medium heat until it starts to thicken. It should look like thick pudding or paste.
    Remove from heat and use a whisk to whip the mixture until completely smooth with no lumps. Chill in the fridge until completely cool. IT IS SUPER IMPORTANT THAT YOU ALLOW IT TO FULLY COOL AND CHILL BEFORE USING IN FROSTING OR IT WILL MELT THE BUTTER AND MAKE THE FROSTING SEPARATE.
    In an electric stand mixer, beat the butter and sugar until incorporated and fluffy. Add flavoring extract and mix.
    While the mixer is running, add the cooled mixture of flour and milk about a tablespoon at a time. Beat for 5 minutes on the highest speed you can without it spraying out of the bowl.
    When the frosting is velvety smooth, use it to fill cupcakes, layer cakes, pastries or as a frosting for any dessert.
