Easy Dill Chicken Salad Bites

Ingredients
  

  • 3 Cups Chopped Rotisserie Chicken Chilled
  • 1/2 Cup Finely Chopped Celery
  • 1/3 Cup Greek Yogurt
  • 1-2 Tablespoons Mayo
  • 1 Teaspoon Ground Mustard
  • Squeeze of Fresh lemon juice to taste (this adds brightness to the flavor!)
  • 1 Teaspoon Chopped Chives or green onion Can sub in purple onion if desired
  • 1 Tablespoon Chopped fresh Dill
  • 1/4 Cup Sliced Almonds Optional but great for texture!
  • Salt and Freshly ground pepper To taste
  • 1 English Cucumber
  • Fresh Parsley and Dill for garnish

Instructions
 

  • Finely chop 3 cups of rotisserie chicken and add to a medium bowl.
    Add in 1/2 cup of finely chopped celery.
    Add Sliced almonds.
    Mix together mustard, greek yogurt and mayo and pour over chicken and celery.
    Add onion and fresh dill.
    Toss mixture until everything is evenly coated.
    Allow to chill in the fridge for 1-2 hours to help it get cold and the flavors marry.
    Slice English cucumber into thin slices and top each bottom with 1 cookie scoop of chicken salad. Top with one more slice of cucumber and hold together with a toothpick if desired.
    Enjoy chilled!
    Extras can be stored in the refrigerator for 3 days.

Notes

If you want to add extra protein to these bites, you can add a few tablespoons of Farmer Cheese (I love Lifeway brand and it won't change the flavor!)
 
While the chicken salad can stay good in the fridge for a few days, you don't want to assemble the cucumber bites more than 2 hours ahead as the salad will draw the water from the cucumbers and they don't stay as crisp.
