Add seedless jam to a bowl and stir. The jam will become runnier and be the perfect consistency for a sauce! Add a drop or two of lemon extract or a pinch of lemon zest (optional but adds yummy flavor!) It's obviously very sweet and concentrated so I just use a small amount on top!Top shortbread with a dollop of cool whip. Top with fresh fruit and a mint sprig. Now add the jam topping and serve chilled!This dessert is so quick and easy to prepare, yet its a showstopper in the presentation department!
