It’s January! We’re all on the lookout for some fun healthy recipes to kick off the new year. I have always adored this strawberry pear and feta salad. It is packed with healthy and delicious flavors, textures and colors! It is truly a feast for the eyes. One of my very favorite additions are the candied slivered almonds, they add such a delicious crunchy garnish for the salad.

Ingredient list for strawberry pear and feta salad:
- Romaine lettuce or Spring mix
- Baby spinach
- Apples (I like honey crisp or Opal)
- Marinated Artichokes
- Strawberries
- Blueberries, raspberries or blackberries (Optional)
- Kiwis
- Sliced, candied almonds (tutorial in recipe)
- Bartlett Pear
- Feta or Blue Cheese
- Bacon Bits
Dressing:
- Olive, grapeseed or vegetable oil
- White wine vinegar
- Sugar and salt
- Dry mustard powder
- Red onion or Shallot
- Poppyseed
- Mayo (optional)

Make it every season
I seriously crave this salad all seasons of the year! It’s such a fun and vibrant salad to make in the dull winter months, but it is also a perfect addition to you summer BBQ gatherings well! You could even add some rotisserie chicken to make it a one dish dinner. The fruit I have suggested for the salad is totally optional, feel free to add whatever you like best!
Strawberry Pear and Feta Salad
Ingredients
- 1 Package Romaine Lettuce or Spring Mix
- 2 Cups Baby spinach
- 1 Chopped Apple I like Honeycrisp or Opal best
- 1 12 oz Jar Marinated Artichoke Hearts Drained and Chopped
- 1 Cup Strawberries Chopped
- 1 Cup Blueberries or raspberries
- 2 Kiwis Sliced
- 1 Cup Candied, slivered almonds 1/4 cup granulated sugar, 1/2 cup sliced almonds, a pinch of seas salt. Add to a pan on medium heat and stir constantly until sugar melts and coats toasted almonds. Remove and spread onto wax to set.
- 2 Bartlett Pears Sliced
- Feta or Blue Cheese
- Bacon Bits Optional
Poppyseed Vinaigrette Dressing
- 1/2 Cup avocado oil Can mix olive and another oil
- 1/4 Cup Freshly squeezed grapefruit
- 1/4 Cup White Wine Vinegar
- 1/4 Cup Granulated Sugar
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Dry Mustard Powder
- 1 Small Shallot or 1/8 cup chopped red onion Optional but very flavorful in dressing!
- 1/2-1 Tablespoons Poppyseeds
- 1-2 Teaspoons Mayonnaise Optional to add creaminess
Instructions
- Add salad mix and spinach to a large serving bowl. Top with fruit, artichokes and cheese. Garnish with the candied almonds.Mix dressing and stir again just before serving. If making ahead, do not add poppyseeds until just before serving. Salad is best enjoyed the day it is made.

Best tips for making Strawberry Pear and Feta Salad:
This salad is best made and served the day of. You can hold off on pouring the dressing on the salad until right before serving. Be sure to give the dressing a good shake or stir as the oil and other ingredients will separate as it sits. You will also want to wait to add the candied almonds until right before serving so they stay extra crunchy for the top of the salad.
