You will love these delicious granola brunch baked apples! The sweetness from the granola adds the perfect balance to the tartness. We added a side of creamy vanilla bean yogurt to really make it complete!
I have totally been bit by the fall bug this year. In fact, have lost count of how many apples I’ve gone through this month and I’m only a week in! You probably saw my Apple Cream Cheese Danish… SO GOOD! My kitchen has been filled with the scents of the season and I am in apple spice HEAVEN!
Baking with cinnamon and nutmeg and fall flavors makes me feel so happy. Home feels so cozy when we gather to the kitchen to enjoy these flavorful dishes together! And there is just something about the scent of baked apples in September, isn’t there?
A few days ago my son who is 10 told me he is already homesick thinking about growing up and moving out. He told me our kitchen is his “favorite restaurant” oh boy! What a compliment that was to his mama!
I think there is such a power to cooking and eating at home. There is something really special about preparing a meal with love and work, and then gathering your loved ones together to create memories. Just one reason I love spending my time in the kitchen!
Granola Brunch Baked Apples
Ingredients
- 6 Apples I love honeycrisp!
- 1 cup orange juice
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 cup slivered almonds toasted
- 1 TBSP all purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/3 cup butter melted
- 1/3 cup honey
- 1 container Tillamook Vanilla Bean yogurt
Instructions
- Preheat oven to 350°F. Remove a 1/2-inch-thick slice from the top of each apple. Using a melon baller, remove core, stopping about 1/2 inch from the bottom of the apple. Arrange apples in an ungreased 2- to 3-quart rectangular baking dish. (If necessary, remove a thin slice from the bottom of each apple, so apples stand flat.) Brush with 1 tablespoon of the orange juice.In a medium bowl combine oats, brown sugar, almonds, flour, cinnamon, and nutmeg. Stir in melted butter. Fill centers of apples with oat mixture, mounding slightly. Pour the remaining orange juice around apples.Bake, covered, for 50 minutes. Bake, uncovered, for 10 to 15 minutes more or until apples are tender. Cool slightly. Drizzle apples with honey before serving. Serve with yogurt.Store leftovers covered and refrigerated.
