Enjoy a stack of sweet and uniquely delicious fluffy homemade buttermilk pancakes for a simple but special homemade breakfast! This recipe is quick to mix up, and produces a delicious batch of thick and soft pancakes your family will devour.
I have seen a few variations of it but this recipe from Sugar Spun Run is easily my favorite! The unique flavor combo of buttermilk, vanilla and a little sweetness from the sugar (sub in pure maple syrup if you’d like) makes this breakfast extra special!
TIP: Be sure not to over-mix better. Whisk just until combined. Allow your batter to sit for 5-7 minutes before you make the pancakes. This will result in nice fluffy pancakes because it will give the baking powder and soda time to activate.
Make sure you see bubbles at the top of your pancakes and watch for set edges before flipping. The texture of these pancakes is so soft, thick and delicious!

Instructions

Pour wet ingredients into dry ingredients. Whisk until mixture is thick and well combined. Allow mixture to sit about 5 minutes to help activate soda and allow the batter to become fluffy. Spray a skillet, pan or griddle with non-stick spray. I like to use 1/3 cup measuring cup to make my pancakes.Allow the pancakes to cook until they become bubbly on top before you flip them. Serve warm and top with buttermilk syrup (above) maple syrup, butter, cream, bacon or fruit (we like to make them into Santa, reindeer and a snowman.
Homemade Buttermilk Syrup
- Add buttermilk, sugar, butter, salt, and corn syrup to a large saucepan. (Use a large pan because the syrup will foam and expand with baking soda). Bring to a boil over medium heat. Boil (rolling bubble) for 5 minutes, stirring consistently. Remove from heat. Add extract. Add baking soda and whisk until syrup foams. Allow to cool and refrigerate to set and thicken. Can be used warm, but it will be a little more of a runny consistency.

Each time I make these Fluffy Homemade Buttermilk Pancakes, my kids devour them! Half of the time the pancakes barely make it off the griddle and don’t even end up with any toppings on them before they’re eaten.
I love the flavor and texture of the pancakes. The creamy buttermilk truly gives them a special and unique flavor, and the little addition of sweetness from the vanilla and sugar is what really sets them apart!
