These roll ups are pretty easy and versatile! You can really use any ingredients that you love best. Go ahead and add in some smoked turkey or cheese if you want!
- Spinach or regular tortillas
- Carrots
- Red or green bell pepper
- Broccoli
- Cauliflower
- Hidden Valley Ranch powder
- Cream cheese
- Sour cream
Making Vegetable Roll Ups
These are so easy to make! If chopping up all of the veggies seems overwhelming, I used a food processor to chop all of mine. I love this method for everything but the peppers. They add a lot of liquid to the mix and can thin your creamy ranch sauce, so for the peppers I would suggest chopping those by hand.
These vegetable roll ups make such a great appetizer, after school snack, lunch or even summer dinner when you don’t want to heat the house up with an oven or stove!
My tip for you would be to not make them too far ahead. The tortillas will get soggy if they sit too long. Make them right before serving and keep them chilled if possible!
Easy Vegetable Roll Ups
Ingredients
- 1 8oz Cream Cheese
- 1 Cup Sour cream
- 1 Packet Hidden Valley Ranch powder
- Spinach Tortillas
- 1 Cup Chopped Carrots
- 1 Cup Broccoli
- 1 Cup Cauliflower
- Red or Green Bell Pepper Optional and to your taste
Instructions
- Beat cream cheese until fluffy. Add in sour cream and ranch powder. Mix well. Spread creamy mixture on a tortilla. Add chopped veggie mixture and any other toppings you love. Tightly roll up tortillas. Chill if desired as this may make slicing a bit easier. Slice into pinwheels and serve chilled.
