Why you’ll love this recipe

Quick and Easy: This recipe uses Rotisserie chicken which makes it super quick and easy to make. You can prep all the ingredients and have it ready to mix together right before you need it, OR it also tastes delicious when you make it ahead and serve it the next day, giving the flavors time to marry.

It’s Versatile: Depending on what you like best, you can easily swap ingredients in this recipe such as chives for purple onions, different nuts, an addition of fruit like grapes or craisens, it can be used in lettuce wraps, with crackers or pretzels as a dip, or even made as a salad with cucumbers in the mix, or on toasted bread.

Healthy: These easy dill chicken salad bites are very light and healthy, especially with the main filling being made with greek yogurt. You can add in Farmer Cheese for added protein and live cultures! I love this salad best on thinly sliced cucumber bites, it is SO delicious and guilt-free!

Variaitions

You can use all mayo for this recipe instead of Greek Yogurt, but I really love the combination if you can follow the recipe below.

Add Farmer Cheese into this mix for add protein and live cultures.

If you’d like to add some contrast in flavor, add in fruit like grapes or craisens for sweetness in this recipe.

Feel free to swap out chives for purple onion if you’d like, but only add a little at a time as purple onion can be very strong, especially after it sits in a recipe.

This recipe can be doubled or tripled depending on your needs. Add a little extra mayo and greek yogurt as needed.

Notes

If you want to add extra protein to these bites, you can add a few tablespoons of Farmer Cheese (I love Lifeway brand and it won’t change the flavor!)

While the chicken salad can stay good in the fridge for a few days, you don’t want to assemble the cucumber bites more than 2 hours ahead as the salad will draw the water from the cucumbers and they don’t stay as crisp.

So delicious! Just made this morning, can’t wait until it’s chilled a few hours. Great use of leftover grilled chicken from the 4th of July!
