Ingredient list for Easy Dill Chicken Salad Bites
- Rotisserie Chicken (we love Costco’s best!)
- Greek Yogurt
- Mayo
- Fresh Dill
- Fresh Parsley
- Chives or purple onion
- Celery
- Ground Mustard
- Fresh lemon
- Salt and freshly ground pepper
- English Cucumber


How to make Easy Dill Chicken Salad Bites
Finely chop 3 cups of rotisserie chicken and add to a medium bowl.
Add in 1/2 cup of finely chopped celery.
Add Sliced almonds.
Mix together mustard, greek yogurt and mayo and pour over chicken and celery.
Add onion and fresh dill.
Toss mixture until everything is evenly coated.
Allow to chill in the fridge for 1-2 hours to help it get cold and the flavors marry.
Slice English cucumber into thin slices and top each bottom with 1 cookie scoop of chicken salad. Top with one more slice of cucumber and hold together with a toothpick if desired.
Enjoy chilled!
Extras can be stored in the refrigerator for 3 days.

Variaitions
You can use all mayo for this recipe instead of Greek Yogurt, but I really love the combination if you can follow the recipe below.
Add Farmer Cheese into this mix for add protein and live cultures.
If you’d like to add some contrast in flavor, add in fruit like grapes or craisens for sweetness in this recipe.
Feel free to swap out chives for purple onion if you’d like, but only add a little at a time as purple onion can be very strong, especially after it sits in a recipe.
This recipe can be doubled or tripled depending on your needs. Add a little extra mayo and greek yogurt as needed.
