This easy coconut almond Chex mix is sweet, chewy and packed with the most delicious textures and flavors. I love the little bit of crunch and unique combination of flavors with the cereal, almonds, coconut and deliciously almond caramel-like mixture that holds it all together.

Easy Coconut Almond Chex Mix

One of my favorite things about this dessert is that it can be served as a snack, party appetizer, dessert or holiday party treat and neighbor gift that everyone will love! Some people refer to this treat as “Christmas crack” because once you start snacking on it, you literally cannot stop! It is so delicious.

If you’re looking for a simple and fantastic treat to share with neighbors, teachers or friends this holiday season, you simply have to give this recipe a try. I took a sheet to share for Thanksgiving and our families loved snacking on it while we all visited. This recipe makes a large sheet full, so there is always plenty to share!

Steps for making Easy Coconut Almond Chex Mix

  • Mix together Chex and golden graham cereal.
  • Add coconut and almonds
  • Bring butter, sugar and karo syrup to a boil.
  • Remove from heat, add almond extract.
  • Pour syrupy mixture over the cereal mix, and gently stir.
  • Spread over a cookie sheet lined with parchment.
  • Allow to cool, break into chunks before it fully sets.

Ingredient list for this recipe

  • Chex mix
  • Golden Graham cereal
  • Coconut flakes
  • Sliced almonds
  • Karo Syrup (light corn syrup)
  • Sugar
  • Butter
  • Salt
  • Almond extract

Be sure to only boil your caramel syrup for 4 minutes. You don’t want to over-boil or the mix could set up too hard and not have that delicious gooey chewy texture that makes it so yummy.

Swap the almonds for another nut if you prefer something else!

This recipe makes a large amount, so be sure to use a large bowl for mixing or split the mix into two bowls.

Adding pretzel pieces could make this recipe delicious with a little bite of salty and sweet.

Add a sprinkle of sea salt over the top once finished, to add a salt sweet bite.

Easy Coconut Almond Chex Mix

Ingredients

  • 6 Cups Chex cereal
  • 6 Cups Golden Graham cereal
  • 1 Cup Sweetened coconut
  • 1 Cup Sliced almonds
  • 1 Cup Karo Syrup light corn syrup
  • 1 Cup White sugar
  • 1/4 Teaspoon Salt
  • 1 Cup Salted butter
  • 1 Teaspoon Almond extract

Instructions

  • Add cereal, almonds, and coconut in a large bowl.
  • In a medium pot, combine butter, sugar, salt and Karo syrup. Mix together and bring to boil for 4 minutes.
  • Remove from heat and stir in almond extract.
  • Pour over cereal mixture and combine gently with a spatula or wood spoon to combine and coat the cereal mix.
  • Spread on a parchment lined sheet and allow to cool.
  • Break into pieces for easy grabbing before it fully sets.

Notes

The mix can be stored in a ziplock bag or covered tray and enjoyed for 3 days after making.
