A few nights ago I had a serious craving for cheesecake. If you’ve been here a while, you probably know I have an incredible recipe for fool-proof cheesecake here! While I think that recipe is absolutely delicious, it is one that needs to be made ahead with plenty of time to cool and set.
I decided I was in no mood to wait, so I ran down to the kitchen to get busy and whip up a recipe that was no-bake but that didn’t compromise at all on flavor! The mousse filling is rich and creamy with a touch of lemon to compliment the tart raspberries. I just know you’ll love this recipe as much as I do!
Delicious No-Bake Raspberry Mini Cheesecakes
Ingredients
- 8 oz room temp cream cheese
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- 1 tablespoon lemon zest
- 6 mini graham cracker crusts
Raspberry topping
- 2 tablespoons seedless raspberry jam
- 5 fresh raspberries
- fresh raspberries for cheesecake garnish
Instructions
- Beat heavy cream and powdered sugar until it comes to stiff peaks. In a separate bowl beat room temperature cream cheese until smooth. Carefully combine the cream cheese and whipped cream mixture by folding together with a spatula. Stir in lemon zest. Add cream cheese mousse to a piping bag if desired, and dispense evenly into 6 mini graham cracker crusts. Top with a fresh raspberry garnish.Chill until served.
Raspberry sauce
- Stir together 2 tablespoons seedless raspberry jam with 5 fresh raspberries (crushing the raspberries unto the jam) to create a delicious sauce to top the cheesecakes with if desired.
