Granola Brunch Baked Apples

Ingredients
  

  • 6 Apples I love honeycrisp!
  • 1 cup orange juice
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup slivered almonds toasted
  • 1 TBSP all purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup butter melted
  • 1/3 cup honey
  • 1 container Tillamook Vanilla Bean yogurt

Instructions
 

  • Preheat oven to 350°F. Remove a 1/2-inch-thick slice from the top of each apple. Using a melon baller, remove core, stopping about 1/2 inch from the bottom of the apple. Arrange apples in an ungreased 2- to 3-quart rectangular baking dish. (If necessary, remove a thin slice from the bottom of each apple, so apples stand flat.) Brush with 1 tablespoon of the orange juice.
    In a medium bowl combine oats, brown sugar, almonds, flour, cinnamon, and nutmeg. Stir in melted butter. Fill centers of apples with oat mixture, mounding slightly. Pour the remaining orange juice around apples.
    Bake, covered, for 50 minutes. Bake, uncovered, for 10 to 15 minutes more or until apples are tender. Cool slightly. Drizzle apples with honey before serving. Serve with yogurt.
    Store leftovers covered and refrigerated.
