This creamy and flavorful simple old fashioned strawberry ice cream is perfect for summertime! Our family has been making this recipe for decades and we always look forward to enjoying it at family BBQ’s and special gatherings.

This strawberry ice cream is uniquely made with simple ingredients and a mix of tart, sweet and creamy notes from the strawberries, lemon juice and cream. It’s super easy to make, and the Ice Cream maker does most all the work for you! I like to make it a little ahead so it has time to set in the freezer before serving. I can’t wait to make a big batch to share for the 4th of July!

Achieving a smooth and creamy texture in your homemade batch
We love using our old fashioned ice cream maker, it makes the process so simple and easy. You can use any maker for this recipe, just follow the manufacturers directions for your individual mixer. This nostalgic maker has worked so well for us and we always get a super creamy texture when the ice cream is set!
2 steps that make a huge difference in the success of your ice cream is to chill your canister a day ahead if possible. Do not set it in the bucket until right before you pour the ice cream mix in so it is very cold.
Having ice cream salt and a big bag of ice on hand is an absolute MUST for this recipe. You cannot substitute other salt. The ice cream salt helps the mixture freeze quickly ensuring your texture comes out so creamy and smooth.


How to make homemade strawberry ice cream
After blending up the strawberries, lemon juice and sugar, you can add your milk and eggs, mix well and then pour the mix into your chilled canister. Make sure the center churn piece is in place, and have someone help you hold everything while you add it to the canister. Place the lid on top, surround it with layers of salt and ice. Plug in to start the freezing process and spoon in whipped cream after about 15 minutes. I usually allow my ice cream to turn for about 20-25 minutes before removing it from the canister, pouring into a dish and freezing for a minimum of 4 hours.




Variations for this recipe
I am excited to test out and share some new ice cream recipes this summer! You can add in some raspberries or blueberries to this recipe, but for the most part you will want to stick pretty close to these portions and measurements so the consistency is creamy and delicious. This ice cream can be served on its own in a bowl, or it is delicious in a sugar cone with a sprinkle of some freshly chopped strawberries on top and even a drizzle of strawberry topping or a little whipped cream. To make it really fancy looking, you could even crush up some sugar cones and garnish a bowl with those and a little dollop of whipped cream with a fresh berry on top.

How long does this ice cream keep in the freezer?
We have had this ice cream stay fresh up to 3 weeks in our freezer. It probably could go a little longer than that, but to be honest we ALWAYS enjoy it so quickly that we never really have extras to store for weeks at a time.

- Ice Cream Maker
Ingredients
- 2 16oz Frozen strawberries in sugar *If sugar amount is different than 21g added sugars, see note below
- 2 1/2 Cups Whole milk Whole is best for a creamy flavor and texture
- 2 Eggs
- 1/2 cup Fresh Lemon Juice Juice of 4 large lemons
- 1 1/2 Cups Sugar *Add an extra 1/4 cup sugar if your containers have less than 21g added sugars
- 1 Cup Heavy Cream
- 1 Box Ice Cream Salt
- 1 Large Bag of ice
Instructions
- Prepare freezing canister by putting it in the freezer the day before or as many hours ahead as possible to get nice and cold. Use a blender to blend frozen strawberries, sugar and lemon juice until smooth. Whisk together eggs and milk. In a med-large bowl, combine with strawberry mixture.Add mixture to canister (make sure center churn piece is in place) and follow manufacturer's directions for your ice cream maker. We surround our canister with a layer of ice, then ice cream salt, then repeat 3 times until the bucket is filled. Add more ice as needed as it melts a bit while mixing. Freeze for about 15 minutes until the ice cream is soft set. While mixture is freezing you can whip your heavy cream to soft peaks. After 15 minutes, fold your whipped cream to ice cream mix with a spoon. Return to freezing for about 10-15 more minutes more. Pour ice cream into a freezer safe dish and cover. Allow to freeze at least 4 hours.
