Today I am thrilled to share a super simple recipe for love letter butter cookies. This recipe only takes a few ingredients and they’re quick and simple to bake. Your kiddos can help too!

Unique Valentine gift
I love buttery shortbread and frosting them into little envelopes just seemed perfect for Valentine’s Day. These cookies make a super fun unique treat to share with someone you love. I think adding a real hand-written love note would be such a fun and special addition.
All you’ll need for these cookies is all purpose flour, powdered sugar, and salted butter. Then for the glaze I simply use powdered sugar, milk and lemon extract. The extract is optional and you can use any flavor you’d like! If you use vanilla, go for the clear so you can keep the frosting white.
Simple glaze frosting
The glaze frosting on these cookies is super simple but looks similar to royal frosting. You will simply want to pipe a square outline, fill it with glaze and then use a toothpick or tool to smooth out the frosting so it sets evenly. TIP* If your glaze isn’t evening out add a tiny bit of milk to thin it. The glaze should be smooth and spreadable.
Allow the first layer of frosting to set before adding an additional outline on top to make it look like an envelope. Mix a red or pink into a small amount of the frosting so you can add small heart shapes to “seal” he envelope.
Love Letter Butter Cookies
Ingredients
- 1 1/2 cups all purpose flour
- 1/2 cup powdered sugar
- 1 1/2 sticks salted butter room temperature
Glaze
- 3 1/4 cup powdered sugar
- 4 1/2 Tablespoons milk You can add more milk a teaspoon at a time if needed. Humidity can affect the frosting so it may be needed.
- 1 teaspoon lemon extract Or any flavor of choice *if you use vanilla try to use clear so your frosting stays white!
Instructions
- Preheat oven to 325° Mix butter, flour and powdered sugar. Dust counter with flour and roll out dough. Cut into squares the size of your choice. I like to make mine small and dainty. Bake for 14-16 minutes, allow cookies to set and cool on tray.Blend together powdered sugar, milk and extract. The glaze should be thick but still run smooth while mixed. If it is too runny, it will not hold its shape on the cookies and will drip thin down the sides. Test a cookie first to check!Fill a piping bag with frosting and clip a very small end off of the bag. Pipe and outline on the cookies and fill the centers. Use a toothpick to smooth frosting by moving it in small circles. Allow to set. Add another layer of frosting outline on top in the shape of an envelope. Color a small amount of the frosting red or pink and make small hearts to "seal" the envelope. Allow to set before packaging.
