It’s no secret the the holiday’s are my favorite time of year because of well… THE FOOD! I love sharing my favorite recipes with you and it makes my heart soar when I receive picture messages of you making these recipes and sharing with those you love.
Today I’ll be sharing a fun little recipe that combines my love of Thanksgiving pie, AND Christmas cookies. How about a pie cookie? They’re so cute and fun to share.

Not a pie maker? Don’t worry! This recipe is really quite simple as long as you follow a few steps. The really fun part is, you get to choose your favorite filling to add, or put your creativity into the crust design! Feeling artistic? Create some dough leaves or cut pretty designs on the top of these little pie cookies to make them extra special.

I have had so much fun using these little bakery baggies for treat gifts. These would make the perfect gift for a neighbor, friend or teacher! I simply added some confetti paper in the bottom, then two pie cookies and a little holiday tag to finish it off. I am attaching a family Christmas card to them as well.
GIFT BAG ITEMS:
Holiday Pie Cookies
Ingredients
- 1/4 cup butter (1/2 a stick) cold
- 1/2 cup Crisco shortening
- 2 1/2 cups all purpose flour
- 1 teaspoon salt
- 2/3 cup ice water
Cookie Pie filling
- 1 can pie filling of your choice
- 1 egg white beaten
Pie cookie topping
- 1 Tablespoon course sugar
Instructions
- In a food processor or large bowl, combine butter, shortening, salt and flour. Cut together with a pastry knife or fork until crumbly. Slowly add ice water a tablespoon or so at a time until dough becomes well combined and cohesive. Add dough to a floured counter and roll out. Use a round 3" cookie cutter to cut out 8 circles. Brush egg white around the edge of the circle, and add a spoonful of filling to the center. Cut additional pie circles or create a lattice topping to cover the pie filling. Press edges and seal with a fork. If you fully cover with another pie circle, be sure to cut a vent on top.Brush pies with remaining egg white and top apple pies with course sugar if desired. Bake at 375° for 20-25 minutes or until golden.
This recipe makes 8 pie cookies, and I usually like to use two flavors of filling. I love sprinkling course sugar on top of the apple pies, it makes them special!
