It’s officially summertime and the kids have been begging to help bake in the kitchen. After enjoying some mini donuts at a wedding reception weeks ago, we decided to try and recreate the yummy flavors. We came up with these delicious and easy fruity pebble mini donuts. The kids love them! They would be fun to make for a kids birthday or summer family gathering. I hope you enjoy them!
Easy Fruity Pebble Mini Donuts: Equiptment
This little donut maker is so quick and easy to use! My daughter was given this for Christmas last year. If you have a little one that is interested in baking, this makes a really fun gift for them! I also like to use a sheet of my favorite parchment sheets under the rack for easy mess clean up!
This recipe for the donut batter is simple and delicious. It has a cake-like texture and the flavor is neutral enough that you can frost the donuts with different flavors for variety. You might be surprised to see nutmeg as a spice in the batter, but it really gives the flavor such depth!
If you don’t have any buttermilk on hand, no worries. I have added a simple substitute in the recipe.
Easy Fruity Pebble Mini Donuts
Ingredients
- 1 1/2 Cups All purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon nutmeg
- 10 Tablespoons Salted butter softened
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup buttermilk If you do not have buttermilk you can add one tablespoon of lemon juice to a half cup measuring cup. FIll remainder of cup with milk and allow to sit for 5 minutes.
Frosting glaze
- 2 cups powdered sugar
- 1/4 teaspoon orange extract
- 1/4 teaspoon lemon extract
- 2 3/4-3 Tablespoons milk
- Fruity Pebble cereal for garnish
Instructions
- Plug in Dash Donut maker and spray with non-stick spray.Mix sugar and butter until blended. Add eggs and vanilla. Add half of the dry ingredients and then add half of the buttermilk. Add the rest of the dry ingredients and then the rest of the buttermilk. When batter in smooth and well mixed, add it to a piping bag or large gallon ziplock bag. Cut the corner of the bag. Pipe batter into the donut maker. Allow donuts to cook for 1-2 minutes or until golden. Remove donuts and add to a cooling rack.Make glaze. Dip the donuts into the glaze and top with fruity pebble cereal. Allow donuts to set for a few minutes. Enjoy!*Donuts can be frozen after baked. Store in an airtight ziplock. Allow to defrost, reheat and frost.
