I have shared our family’s favorite Easy Cajun Shrimp Boil Foil Packet Dinners over on Instagram with you many times, but today I thought it deserved a permanent place here on the blog! These packets make for a super fun, inexpensive and easy meal that your family will love!
Everyone gets their favorites
My family absolutely goes crazy when I make this dinner and it tends to show up nearly monthly on my menu! One of my favorite things about this meal is that it’s a fun interactive dinner that the kids always ooh and ahh over. They love being able to open their little individual packets and see all of the beautiful colors and textures inside.
This meal is a perfect dinner to make any time of the year. You can even grill it during the summer and eat outside!
Supplies you’ll need for your Easy Cajun Shrimp Boil Foil Packet Dinners:
- Corn on the cob (cut into halves or thirds)
- Mussels (I get the Sam’s choice frozen pack from Walmart for less than $5)
- Crab legs
- Cajun Style Andouille Sausage (Aidells brand)
- Shrimp (frozen or fresh works great!)
- Red potatoes or variety pack
- Cilantro or Parsley
- Lemons
- Zucchini or yellow squash slices (optional)
- Butter
- Aluminum Foil
- Old Bay seasoning
- Salt
- Garlic
Kids don’t like cajun or seafood? no problem!
If you’re worried your kids won’t enjoy this meal and you don’t want to make them a separate dinner, try this: My younger two kiddos aren’t yet a fan of cajun spice or seafood but the beauty of these packets is that you can totally make them a little differently for each individual.
For my younger kids I only add potatoes, corn, and a few shrimp. I have even cut up hot dog slices in place of the sausage and I only add butter and no cajun! They love them! My daughter just started having me add shrimp, cajun and a little sausage (you can see her foil pack in the left lower part of the first picture in the post).
Easy clean up
We love that there are no dishes or clean up after dinner! The packets go right into the trash and all I have to do is wipe down the counter. That’s a win! These packets are fun to prepare and you can really tailor fit them to each member of your family depending on their love of spice or whatever combo of ingredients they like.
Easy Cajun Shrimp Boil Foil Packet Dinners
Ingredients
- 4 link pack Aidells Cajun Style Andouille Sausage Sliced
- 2 Lemons Sliced
- 4 pack Sweet Corn on the Cob Cut into halves or thirds
- 1.5 lb bag Gemstone Medley Baby potatoes Halved or quartered
- 32 oz pack Sam's Choice Frozen Mussels
- Wild snow crab Optional
- Fresh Parsley or Cilantro
- 1 bag Large Frozen Shrimp Fresh works great too. You can use fully frozen uncooked and they steam really quickly.
- 8 Tablespoons Butter Cut into tablespoon tabs
- Sea Salt
- Old Bay Seasoning
- Garlic
Instructions
- Preheat oven to 425°Spread heavy aluminum foil sheets about 15-16" wide for each person. If you are using regular foil, I like to double mine so no juices escape.Add all ingredients except the cilantro or parsley. I like to halve or quarter the potatoes to ensure they cook through. Top with a tab of butter (about a tablespoon) and some fresh garlic, minced. Sprinkle with Old Bay to your liking. Spread an additional sheet of foil over the top and roll up the top and bottom, and then the sides so the packet it sealed up. Bake packets for 25-30 minutes. Open carefully by using a sharp knife to slice down the center of the top piece of foil. It will be very steamy so do this with care. Sprinkle fresh cinantro or parsley on top and add more lemon slices if desired. This dinner is best enjoyed hot and right out of the oven. If you would like to create a more bold and spicy packets, mix ingredients in a large bowl together with melted butter, Old Bay, seafood seasoning, garlic and sea salt. Toss together and then add to packets so everything is covered evenly with seasoning. If grilling the packets, grill at 400° for about 20 minutes turning once, halfway through.
