Easy 3 Ingredient Fluffy Biscuits
Fluffy and flaky biscuits that can be used in a variety of ways. They're delicious for snacking, for a meal side or for breakfast sandwiches! Customize them by adding cheese, seasonings or even honey butter.
Ingredients
- 2 Cups Self rising flour You can add in 3 teaspoons baking powder and 1/2 teaspoon salt to regular all purpose flour to make it self-rising.
- 1 Cup Cold Kefir (we love Lifeway brand) You can also use buttermilk
- 1 Stick Salted butter 8 tablespoons
Instructions
- Preheat oven to 450°Grate butter into a bowl and put it in the freezer for 10 minutes to keep it cold. This makes the butter so easy to incorporate into the dough and ensures that it doesn't melt until baking. This makes the biscuits have a flaky texture!Sift flour into a bowl. Add grated butter and use a fork or pastry knife to cut it into the flour (don't use your hands, they're too warm!)Pour cold buttermilk over mixture and use a wooden spoon to fold dough. It will be shaggy but continue until a rough ball forms. Dump dough onto a floured surface and sprinkle with a little flour, then pat it down into a rectangle with your hands (no thinner than 1")Fold the dough over onto itself, press again and fold. You will need to repeat this process 8 times. This will create layers in the dough. Sprinkle flour as needed, but not too much, as to not make the dough dry and tough. Finish by pressing a rectangle about 1" thick. Use a circle cutter to cut biscuits out. Depending on the size you should be able to get 7-10 biscuits.Very lightly grease or butter a cast iron pan. You can also use a baking sheet with parchment.Place biscuits in the pan and bake for 10-12 minutes or until lightly golden. Enjoy warm or cooled. You can add cheese, seasonings, or even make some honey butter to enjoy on top.
