If you’ve ever attempted candy making, you know it can take a lot of work, time and often end in failure if things aren’t exact. I’ve had to toss many batches of caramels due to them being too soft, or too hard. Using a candy thermometer can be tricky and time consuming!

It truly is the thought that counts. Creating a special little box of chocolate caramels will be such a fun and unique gift to give. This would also make a fun teacher gift!
Easy chocolate dipped caramels
Ingredients
- 1/2 cup (one cube/stick) salted butter melted
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup sweetened condensed milk
- 1/2 cup light karo syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Chocolate
- 1 bag Wilton candy melts
Instructions
- Line an 8×8 or 7×91/2 baking dish with parchment paper (I like to cut the corners so the paper sits down in the pan without wrinkling. Set aside. If you do not have parchment, butter works too!Melt butter in a large glass bowl in microwave. Add all other ingredients and stir until combined. Return to microwave for 6 minutes and 30 seconds. All microwaves are different, so you'll want to start with 6 minutes. Carefully (using hot pads) remove bowl and drop a spoonful of the caramel into a glass of ice water. This will allow you to check the consistency of your caramel. Touch the cooled caramel in the water to know its consistency, if too soft, return to microwave for another 30-60 seconds. My perfect time for firm caramels was 6 minutes, 30 seconds.Pour caramel into prepared baking dish. Allow time to cool and set on the counter, OR to speed up the cooling you may place the pan in the refrigerator to cool. Once fully cooled and set, remove parchment and slice or cut caramels into squares. Melt Wilton Candy Melts of your choice, and drop chocolates with a spoon, dipping and then dropping them on a parchment sheet. Allow to set on a parchment sheet until dry, Then package them up for someone special!
